Recipe Recap: January

Hi friends! I can’t believe it’s already February, I feel like just yesterday I was sharing our favorite crock pot recipes and that was before Christmas!

Here are some of our favorite Pinterest finds from the past month, I hope you enjoy. šŸ™‚

Marinated Grilled Pork Chops via Love to be in the Kitchen

We don’t buy pork chops very often, so I forget how delicious they are. Since it’s summer here we have been using our grill as much as possible, and I am always on the lookout for recipes that just need me to marinade and toss on there. This marinade is so delicious, we have made it twice now.

Orzo Salad with Tomatoes, Basil and Feta via Mel’s Kitchen Cafe

We made this before we went home for the holidays and it was so good that I made it again last week. Both times I subbed the feta for mozzarella because we already had it on hand from other recipes. I think the flavor of the dressing is what makes it so good. I ate this for lunch for the next couple days and it only got better marinating in the fridge.

Tomato, Basil, & Mozzarella Chicken via Tasty

I almost always try and make two tomato basil recipes a week because otherwise I waste so much fresh basil (we really need to grow our own again). This was one of those addicting sped up recipe videos you always see on Facebook. If you are into that, then the video is on the site as well. I love anything tomato and basil and this was a hit with all three of us.

Slow Cooker Coconut Curry Chicken via Fit Foodie Finds

We love curry in our house and I love a slow cooker meal, so this was an obvious choice to try this week. It was a roaring success and you might have even seen me show the recipe on Instagram stories (@courtneyalkek) because all of us cleaned our plates both nights we ate it. The recipe made enough for two dinners for all three of us and I don’t even think I used as much chicken as it called for. I did a mix of chicken thighs and breasts and threw them in frozen because I have found that is the best way to keep them from dying out. This was super easy and only required a few ingredients and several we already had.

Turkey and Black Bean Baked Tacos via The Baker Mama

I am slightly obsessed with following The Baker Mama on Insta and Bloglovin’ if you aren’t following her you definetly should. She has the cutest four kids and is always making the most delicious looking treats and meals. I have been wanting to try these baked tacos for ages and when one of my fellow pregnant friends mentioned she was craving tacos that is all I could think about until these were on the menu. We just used a can of refried beans instead of mixing black beans as well, but everything else was exactly the same. I topped mine and Trav’s with a dollop of guac and lettuce and left Leighton’s alone just cut it up a bit. Just talking about them is making me want to go ahead and make them again next week…

Healthy Cauliflower Fried Rice via Eat Yourself Skinny

This is another super quick and easy recipe to throw together with things you probably already have on hand. Our grocery store sells cauliflower “rice” for pretty much the same price as a head of cauliflower so I totally use that short cut whenever I made any cauliflower rice recipes. Trav added siracha to his bowl, but Leighton and I were happy to eat ours plain. Also, random tip- I keep chopped green onions in the freezer because when do you ever use the whole stalk (?) in a recipe. Most of the time I need them it’s for a cooked recipe so I just take them out a bit before to thaw and chunk them in to cook a bit.

  1. I always love these posts of yours. I’m keen on that orzo recipe, but can’t eat orzo – do you reckon I could sub brown rice instead? Or quinoa? Although I’ve kind of overdone quinoa recently so maybe brown rice… Also totally pinching that green (I call them spring!) onion tip, I have some slightly sad looking ones in my fridge right now. Costco problems!
