Friday Favorites & a Giveaway

Chick-fil-a Copycat Recipe

I am pretty sure you can’t be from the south and not have an obsession with the fast food chain, Chick-fil-a. It’s definitely one of the most missed restaurants by expats. I’m not sure why it’s taken me so long to try one of the many copycat recipes on Pinterest, but this week I finally did. This is the one that I followed to a T. I don’t think I have ever fried anything before, so my first batch were not nearly as golden as the later ones. Other than that I was really impressed with how much the nuggets actually had the Chick-fil-a flavor (just not nearly as breaded and crispy).

The recipe for their honey mustard was spot on too. I paired ours with zucchini fries, which was not a good idea because both recipes take a bit of time. Next time I will stick to something more simple. BUT if any other expats out there are missing Chick-fil-a, I would definitely recommend trying this recipe out.

Another Food Blogger

I met my friend, Gavin, through our “mother’s” group (he’s the token stay at home dad) after he and his family moved here from New York City. His background is in food and he actually managed Michelin restaurants before he made the switch to stay home when they moved. He started an Instagram to document his culinary ventures, and after multiple requests he decided to finally start a blog to share his amazing recipes. I can vouch first hand at the deliciousness of his food.

Rocky on the Road


My other new blogging buddy is Angie. We met in our mother’s group when our crazy toddlers were just six weeks old. It’s been so fun to share motherhood with her the past year and a half. Please look at these two cuties the other day at playgroup. They are growing up way too fast!

Pre-baby, Angie and her husband were avid travellers and have decided to not let parenthood slow them down. They are heading off in July on a year long adventure with their two year old in tow. They are starting in Sri Lanka and traveling around from there.

She just started blogging and instagramming their journey as they enjoy their time in Brissy before selling/storing everything and heading off! We are going to miss them so much, but can’t wait to follow along!

Nursery Prints

I have been seeing these adorable bunny prints all over Pinterest lately and thought they would be perfect for our gender neutral nursery. The shop is actually from Australia, and she has lots of other adorable animal prints. I can’t wait to get them framed and on the wall.

Winner, Winner, Chicken Dinner

I mentioned in my weekending post that we attended a baby and toddler expo last Friday. A lot of the stalls had a place where you could scan your ticket to be entered in giveaways. I never win anything, but decided to scan at a couple stalls.

Imagine my surprise when I checked my e-mail the other night and found out I won a $300 prize package, including $100 voucher to K-mart (not the same as US Kmart, wayyyy better), an ergo swaddle and some more newborn essentials. I am mostly excited for the K-Mart gift card and can’t wait to use it to knock off a few items on my nursery wishlist.

GPS My City Giveaway

You might recall my blog post awhile back sharing how a few of my travel posts had been turned into interactive travel guides on the app, GPS My City (if not, you can read all about it here).

  1. Are AU K-Marts more like our Targets? Those bunny prints are so sweet. We’re doing a bit of traveling this year — Phoenix and I are taking trips to see my brother’s and his cousins. Jordan and I will also be taking two trips without Phoenix — NYC & Mexico. We’re celebrating our 10th wedding anniversary. 😉

    • Yeah I would compare them more to Target. We actually have Target that literally looks just like US Target (even the same logo, apparently the US one didn’t copyright it or something) and they have cute stuff but K-Mart is still more popular. Ah is it your first trip without Phoenix?

      • We did an overnight last summer when we were in Chicago visiting family, but this will be our first several night trip away. Because I ended up nursing longer than I necessarily anticipated, I knew a real vacation away would be farther down the road. 😉

    In terms of travel plans, we are staying within Australia this year. A babymoon in the Blue Mountains and then potentially a break up your way in Noosa in September/October.

We’re from Houston, the Jersey Village area, and have loved reading about your family’s experience, being Texans now living in Brisbane. We love all your recommendations you’ve posted in the past when it comes to weekend trips, etc., from Brisbane, and can’t wait to do some of them once we arrive. We chose for our first visit to Australia to be Brisbane versus the other major cities, because it sounded so unique and up and coming. We can’t wait to arrive and experience the charm of your city!
