Our Favorite Slow Cooker Recipes

So, I went to go type up a recipe recap when I realized I haven’t posted one since August- whoops! As I started going through my Pinterest board I realized all of our most recent recipe finds were slow cooker meals. I’m not sure if I am just getting lazier or Leighton is wearing me out more lately, but I have been turning to my $20 Kmart “crock pot” more and more in the past few months.

As much as I loved the convenience of making dinner in the slow cooker, I found that a lot of times the chicken would get too dry or the recipes all tasted the same. Well, I will say I have changed my tune recently and have found so many good recipes. I also figured out through trial and error that my cooker happens to cook really fast, so if I use frozen chicken (we buy it from the deli and chunk it in the freezer when we get home), and cook for less time, the chicken stays nice and juicy.

Since most of you are bundled up for winter on the other side of the world, hopefully you will be extra grateful for some new recipes to keep you nice and toasty. Here are our favorites lately and a couple staples I have been making for years.

Slow Cooker Parmesean Herb Chicken and Orzo via Creme de la Crumb

We made this last week and it was not only tasty but it made enough for two dinners (for both of us) and a lunch! I am all about easy slow cooker recipes that keep me from having to cook two nights in a row. I would take her suggestion in the recipe notes and cook the orzo separately (I didn’t and it was a bit mushy).

Chicken Enchilada Soup via Mix and Match Mama 

I love anything Mexican themed and Shay’s recipes rarely disappoint. We added cheese and a dollop of greek yogurt on top and it was so yummy.

Slow Cooker Hawaiian Shredded Chicken via The Real Food Dieticians

I have already made this recipe twice since I found it not too long ago. The chicken is so flavorful. We made the lettuce wraps and also used the chicken in a salad and on it’s own.

Crock Pot Honey Garlic Chicken via Diethood

My girlfriend sent me this link the other day when I asked her what her go to, easy recipes are. She suggested pairing it with brown rice and broccoli which is exactly what we did and it was perfect. Tasted just like takeaway garlic chicken!

Slow Cooker Indian Butter Chicken via BeautyfromBurntToast 

I want to sing this recipes praises from the rooftops! Seriously, I made it last night and have already shared it with two friends. If you are a fun of Indian food, especially Butter Chicken, you need to make this. The best part is- the most unhealthy ingredient is coconut milk! It’s all coconut milk, tomato paste and spices! It tastes just like the butter chicken at our favorite indian restaurant. This one also makes a ton, so either halve the recipe or plan on eating it a few nights in a row.

Quick and Easy Lentil Quesadillas via Pinch of Yum

I’m pretty sure I have mentioned this recipe in at least one, if not two recipe recaps. It’s a staple around here (it’s also what I was cooking in my last day in the life post). It sounds kind of random if you’re not a big vegetarian fan, but I promise you will not miss the meat in these. They are very filling and tasty. I usually halve the recipe and we still have plenty of leftovers, but this time I didn’t and between the three of us we were eating lentil quesadillas for days. So half is plenty unless you are feeding a big family!

Chicken Tortilla Soup via Evolving Table

Another simple dump and go recipe that is made up of several ingredients you already have on hand. And who doesn’t love a bowl of tortilla soup?




Recipe Recap: April and May Edition

As you can tell by the post title I am a little behind on my recipe recaps, but hey- better late than never!

Here are a few of our (all three of us!) favorites from the past couple months. As always I have the recipe titles and pictures linked to the blog where they are found.

Sheet Pan Mini Meatloaves with Potatoes and Green Beans via Strawberry Blondie Kitchen

I have always been a little creeped out by meatloaves but I am pretty sure it was just the name. A few years ago I finally tried them and realized they are actually quite tasty. This recipe was really easy and I LOVE a one sheet pan meal. We always have green beans and potatoes on hand because one of our usual stalls at the farmer’s market always has bags of them for 3 for $5. All three of us really enjoyed this meal, it’s prefect for little fingers too.

Spaghetti Squash Caprese via Fashionable Foods

Spaghetti squash was a staple when we lived in Houston, but it isn’t always easy to find in Brisbane. When we spotted it at the market we knew we needed to take advantage of it. I always love anything tomato basil and this was no exception.

Paleo Chicken Taco Burger via Tablespoon

We love a good chicken or turkey burger at our house. Not only are they so yummy but easy for Leighton to enjoy as well. These were so yummy with avocado on top and served with a side of Cilantro Lime Rice.

Greek Turkey Burgers with Tzatziki Sauce via Foodie Crush

See? I wasn’t joking. These might be my new favorite burgs. I just love anything greek. And full disclosure I am lazy and used store bought tzatziki instead of making my own. We also ate these bun less on a bed of rocket (arugula). Leighton really liked these in fact she wanted nothing to do with her veggies when they were on her tray.

Recipe Recap {July}

recipeHi friends! I am back for another month of our favorite recipes. I skipped out on June since we spent the majority of the month with family in town and were doing a lot of traveling. When we were home I followed my mom’s golden rule and did not try to cook a new recipe with company which is a lesson she learned the hard way (many times). This month we were able to back into our normal routine and cooking up a storm (our $50 challenge also encouraged this). Here are the winners for the month.

1. Naked Greek-Feta Zucchini Turkey Burgers via Skinnytaste

Naked Greek Turkey Burgers

Skinnytaste never fails. I have been wanting to make this for a while and I am SO glad that I finally did. This will be on a repeat list for sure. The turkey burgers were amazing but the salad on top was my favorite part.

2. Lentils with Brown Rice and Feta via A Family Feast 


We have been on a lentil kick over here lately. This was so yummy and even better leftover the next day for lunch! Also, someone (me) forgot to buy zucchini so I subbed in cauliflower we had in the fridge and it was still delicious.

3. Red Quinoa and Black Bean Vegetable Salad via Oh She Glows


Lots of protein and perfect to stick in a mason jar or pyrex and bring to work all week.

4. Panko Crusted Snapper via Supper for a Steal


We don’t buy snapper very often but I think we need to start. This recipe was really easy plus it is all stuff you have in your fridge/pantry already.

5. Lentil Chili via Little Broken


I told you we have been all about the lentils lately. It is a perfect vegetarian option for a chilly, winter night (oh wait it’s not winter everywhere else?). This tastes exactly like regular chili, you don’t miss the meat at all.
